Salt is added liberally to raw mango while making pickles for its preservative property. The salt absorbs the water content from mango which leaves it relatively dry. There is no scope for bacteria multiplying or harmful mold forming. Salt acts as an excellent preservative for making pickles and storing and using them for a long time.
