The color of the skin and hair, comes from a molecule called melanin. Melanin comes in two different varieties: one of a dark brown color called eumelanin, seen in African, Latin American and Asian people; and the other one of a reddish hue, called pheomelanin, mostly seen in certain European (Nordic and Scottish) people.

Melanin is produced by a special set of skin cells called melanocytes that are derived from the same embryo cells that produce neurons and keratinocytes (skin cells).

It's interesting that almost all human beings have THE SAME number of melanocytes, but depending on their functionality, the color of the skin will vary from a very dark, almost “black” tone, in those that have very functional (productive) melanocytes; passing through a series of tanned and reddish colors; to a complete “white” (pinkish), skin tone of the albino people, who have non-functional melanocytes.

So, the reason why albinos have completely “white” skin and hair tone, is that their melanocytes are not functional at all, and cannot produce melanin. And there are various genetic defects that lead to the same albino appearance, and some of them have not only the skin problem, but also immune problems
