In case of uniform velocity, both the magnitude and direction of velocity is constant. If the velocity is not uniform, either the magnitude or direction or both change.

Some examples of non-uniform velocity are

Uniform circular motion - the magnitude of the velocity is constant but the direction changes.

An object falling vertically under the influence of gravity and no other force - the direction of the velocity is constant but the magnitude changes.

Motion of a projectile launched at an angle to the horizontal - both the magnitude and direction of velocity are changing.
