Amylase is an enzyme that catalyses the hydrolysis of starch into sugars. Amylase is present in the saliva of humans and some other mammals, where it begins the chemical process of digestion.

Amylase functions as a catalyzer for hydrolysis of starch into smaller carbohydrate molecules like maltose. Amalyse is divided into two sub-categories:

1.    Alpha-amylase  

2.    Pancreatic amylase

Alpha-amylase- is present in living beings. Alpha-analyses are produced by salivary glands and are responsible for attaching the bonds of the starch, molecule and breaking it down into smaller particles.  

Pancreatic amylase- as the name indicates, this enzyme is produced by pancreatic. From the pancreas, it is secreted into the intestines.  

How does amylase functions- Amaylse helps in the breakdown of complex starch into smaller molecules which are easily digestible. The pancreas makes most of the amylase, but a small amount is also secreted y salivary gland.

The salivary amylase begins the process of digestion by breaking starch into molecules which can be easily digested.

Once the food leaves the stomach and reaches the intestine, the pancreatic amylase secreted by the pancreas reaches the pancreas and works on it for further digestion.
