Answer: the simplest explanation that can be given to your question is as follows:
In that 180L of glomerular filtrate
95% of the total filtrate is water which is passed from PCT( Proximal Convulated tubules), loop of Henle and DCT ( distal Convulated tubule) in which the reabsorption of water takes place along with absorption of nutrients and NH3 by nephrons present in them.... thus the rest water which highly concentrated by urea, ammonia and some water ( 1.2-1.5) gets out of the body as urine.

PCT, loop of henle and DCT are the different parts of nephron( functional and structural unit of kidney)... see the diagram of nephron and you are good to go.
