Grapes hanging on the plant do not ferment but after being plucked from the plant can be fermented.

because when they are hanging on the plant ,they take oxygen from the environment nd oxidation occurs.

Explanation:

But when they are plucked oxidation doesn't occurs...and they can be fermented!
