Graphite is a crystalline material while carbon is an amorphous material.

graphite is a crystalline material because the atoms in graphite are close to each other which are held with electrostatic force of attraction, where else car one is an amorphous material because it exist mostly in gaseous forms. Although,carbon has three allotropes namely Graphite slightly hard,Diamond which is the hardest natural substance and Buckminsterfullerene with 60 carbon atoms arranged in the shape of a football.
