Rancidity is a term generally used to denote unpleasant odours and flavours in foods resulting from deterioration in the fat or oil portion of a food. Three different mechanisms of rancidity may occur. These are oxidative, hydrolytic, and ketonic.

⭐ In many cases,the packed food item is protected from rancidity by flushing the air out of the plastic bag by nitrogen.
⭐ For example,plastic bags containing potato chips are flushed with nitrogen before being sealed to prevent them from oxidation.
⭐ (RANCIDITY IS A TERM WHICH COMES FROM LATIN WORD 'RANIDUS' WHICH MEANS 'HAVING UNPLEASANT SMELL OR TASTE'.
