Q-1 I)Yeast is used as leavening agent in baking since earlier times. The most commonly used species is Saccharomyces cerevisiae because of its ability to ferment sugar in the dough vigorously and to grow rapidly. The carbon dioxide used during the fermentation is responsible for the leavening or the rising of the dough.

ii) In the pharmaceutical industry, bacteria are used to produce antibiotics, vaccines, and medically-useful enzymes. Most antibiotics are made by bacteria that live in soil. Actinomycetes such as Streptomyces produce tetracyclines, erythromycin, streptomycin, rifamycin and ivermectin.

Q-2 The microorganisms decompose dead organic wastes of plants and animals converting them into simple substances. These substances are again used by other plants and animals. Thus, microorganisms can be used to degrade the harmful and smelly substances and thereby cleans up the environment.

Q-3 Nitrogen-fixing bacteria are prokaryotic microorganisms that are capable of transforming nitrogen gas from the atmosphere into “fixed nitrogen” compounds, such as ammonia, that are usable by plants.
