How acidity change to alkaline in alimantary canal

In the alimentary canal, there is a structure called the 'gall bladder' while temporarily stores bile juice secreted from the liver. This bile juice is very alkaline due to the presence of Na2CO3 [ Sodium Carbonate ].
When the acidic partially digested food (chyme) enters the duodenum ( the primary section of the small intestine), this bile is secreted and turns the acidic chyme to alkaline chyme. This bile juice also emulsifies fats and breaks down the large globules into smaller lipids.
