The digestion of carbohydrates(polysaccharides) starts in the mouth where the salivary amylase converts about 30% of the starch to a disaccharide maltose.

The next step in digestion takes place in the duodenum of small intestine. The pancreatic juice containing pancreatic amylase breaks down polysaccharides like starch to disaccharides like Maltose, Sucrose and Lactose
Polysaccharides (Starch) -----> Disaccharides(Maltose,Lactose,Sucrose)
The intestinal juice(succus entericus) contains disaccharidases(enzymes) Maltase, Sucrose and Lactase which break down Maltose, Sucrose and Lactose into monosaccharides as follows:
Maltose -------> Glucose + Glucose

Sucrose ------> Glucose + Fructose
(sucrase)
Lactose -------> Glucose + Galactose
