Answer:

The difference between saturated and unsaturated fat lies in the number of double bonds in the fatty acid chain. Saturated fatty acids lack double bonds between the individual carbon atoms, while in unsaturated fatty acids there is at least one double bond in the fatty acid chain.

Acylglycerols constitute the majority of lipids in the body. Triacylglycerols are the major lipids in fat deposits and in food, and their roles in lipid transport and storage and in various diseases such as obesity, diabetes, and hyperlipoproteinemia will be described in subsequent chapters.

Saturated acylglycerols

Saturated fatty acid refers to a type of fatty acid that has no linkages of unsaturated between carbon atoms. This type of fatty acid cannot absorb more hydrogen due to the lack of double bonds. Moreover, these types of acids commonly exist in the fats of animals.

Unsaturated acylglycerols

Unsaturated fatty acids refer to acids that are characterized by one or more double bonds. These acids are able to absorb additional hydrogen atoms, thereby showing the difference between saturated and unsaturated fatty acids. Moreover, the categorization of unsaturated fatty acids can take place into polyunsaturated fatty acids and monounsaturated fatty acids.

Difference between Saturated and unsaturated acylglycerols:-

Saturated acylglycerols acids consist of a single chain of carbon atoms and there is no double bond here. whereas, Unsaturated acids consist of carbon atoms and there are one or more double bonds here

• At room temperature saturated acylglycerols are solid , but At room temperature unsaturated acylglycerols are liquid.

• In saturated acylglycerols Only a single bond hydrocarbon chain with no double bond where as in unsaturated acylglycerols One or more double bonds hydrocarbon chain.

• The melting point of saturated fatty acids is relatively higher , and The melting point of unsaturated fatty acids is relatively lower.

•Palm oil, coconut oil, and animal fats are comes under saturated acylglycerols . Sunflower oil, walnuts, plant oil, vegetable oil, canola oil, flax, and fish oil comes under unsaturated acylglycerols.
