You can demonstrate capillary action and transpiration by placing a flower in a glass of coloured water. After a few hours the petals will turn the same colour as the water, this is because the coloured water is transported up the stem and into the petals.

This is for in a leaf but I hope it helps.

First you cover the plant in a plastic bag making sure no gaps are there. Then as water leaves through the stomata, you can see the condensation on the plastic bag.

You could also do this one which would be better.

You cut of most of a plant leaving about 2-5cm of the stem. Then put a glass tube with a little bit of water with rubber sealing over top. mark how far the water goes up to. Then you can see the water getting pushed up only a little bit  after a few days.
