How could Astrophysical Jets escape out of black holes, instead of collapsing in them?

Because “ejected from a black hole” is not the same thing as “ejected from the inside of a black hole”.
The material in polar jets never enters the black hole itself. It has always been outside, and never crosses the event horizon. It starts in the accretion disk, which is also entirely outside the black hole proper, and travels around the outside of the black hole before being being ejected away from it.
