Answer:

Hunter Gatherers don’t necessarily want to become herders or farmers. In a lush climate an Hunter Gatherers society will arguably get better food and certainly more variety than herders and farmers. And they will be less of a target for attacks by rival societies. Perhaps a better question is why did the majority of the world’s population live as Hunter Gatherers or a blend of Hunter Gatherers, farming and herding until the 1600’s or 1700’s? Archeologists have found that most Hunter Gatherers societies were healthier than farmers or herders. Not to mention that once a society was sedentary they needed protection, and this had to pay higher and higher taxes or tithings.

Answer:

People saw that they could attract and tame animals by leaving food for them. The first animal to be tamed was the ancestor of the dog. ... People often protected these animals from attacks by other wild animals. This is how people became herders.
