There are a lot of fungus particles or mould particles floating in the air at any given time. There must be air inside the jar. When a few days pass, the fungus grows with food(bread) and moisture on the bread. Overtime it becomes visible to us. If the jar was vacuum sealed it wouldn't have happened.
