This is due to cell wall and cell membrane also.
It also depend on the am of cytoplasm and PROTOPLASM in the cell.

The plant cells can acquire different shape and sizes due to the shrinking and expanding of the protoplasm also the cell wall can also change its shape and size. For the plants the vacuoles also play a very important role in changing the shape of the cell.

While in animal cells the cytoskeleton is responsible for the change in shape of the cell also the plasma membrane helps in defining the shape of the cell.
