Carbon dioxide extinguishes work by displacing oxygen, or taking away the oxygen element of the fire triangle. The carbon dioxide is also very cold as it comes out of the extinguisher, so it cools the fuel as well. CO2 forms a layer of CO2 on the fire thereby cutting off supply of oxygen. the molecules of CO2 also spread very fast. when it is spread ,it cools down the combustible substance below it's ignition temperature. this is how CO2 helps in extinguishing fires.
