For an essay I just count word by word , I know its time taking but you have asked that how do you count so I count word by word .

Firstly count how many words are there in a line and then count the number of lines you have used for writing.
Now multiply both the numbers and you can have an approximate idea of how many words you have written.
Follow this step if you have written more than one page and then do the sum of the number of words you have used in each page(already counted).
In this way you can easily have an idea of how many words you have used in your essay.
