How does a piece of bread taste after we chew it for sometime?

When we chew the bread, saliva gets mixed with it. The enzyme, salivary amylase present in saliva breaks down complex carbohydrates of bread into sugars. This is the reason why, bread tastes sweet on chewing

a piece of bread will start tasting sweet after some time because after some time the carbohydrates will start breaking down because of saliva
