How does a veterinary doctor find out the body temperature of domestic animals and birds?

They insert a rectal thermometer ........the animal does not feel it - it is like putting your finger gently in your own nostril. As the vet waits for the thermometer to register .....the cuddling/examination continues.....animal/bird unaware.Either orally or rectally depending on the animal. Usually they don't check the bird temperature with a thermometer because it will rupture it's cloaca glad but by checking it's poop. Any abnormalities will determine whether or no your bird has a fever or not. You should always take your animals to the vet before doing anything yourself.
