How does baking of bread make them spongy?

Hio.....

Baking Powder is added to Breads & cakes to make them spongy.
Baking Powder is a mixture of Sodium Hydrogen Carbonate (NaHCO3) and a mild edible Adidas such as citric acid. The fluffiness and softness is required in food stuffs like bread which is produced by the Baking Powder due to the release of Carbon dioxide (CO2).

The equation is given Below

NaHCO3 + H plus ion from any acid → CO2 + H2O + Sodium Salt of Acid.

The dough rises during baking due to the release of CO2 which makes it soft and spongy....
