Evaporation causes cooling because during evaporation the particle of the liqued absord energy from the surroundings to regain the energy lost during evaporation. the absorbtion of heat from the surrounding makes the surrounding  cool. for eg the water become cool in the earthen pot.

Evaporation causes cooling if when we put some spirit or petrol on the back of our hand it takes out the latent heat and evaporate. It absorbs the heat from the surrounding. Thus we feel cool on hand where petrol or spirit was put.
