During summer season as the temperature is so high , it increases the rate of evaporation and also latent heat of vaporisation . The pot has many small and tiny pores in it due to which the water inside the earthen pot oozes out through these pores and take the heat energy from the surroundings to regain its heat energy lost during this process.
