There are holes present on the outer surface of earthern pots.The water gathers in these holes and observe heat from the surrounding and evaporates which causes cooling effect.Thats why water kept in an earthen pot become cool during summer.

when we keep water in Earthern pot which contains very tiny perforated holes from which water molecule having high kinetic energy get evaporated by absorbing some heat. The heat loss makes water cool.
