This is because there are few molecules of water which can manage to muster enough energy to escape from the large body of molecule and escape into the air

Evaporation doesn't need 100°C ,as it is not boiling.Evaporation is way far from boiling. Boiling is bulk phenomenon whereas evaporation is surface phenomenon. Thus no high temperature is required to evaporate ,so water can even evaporate at the room temperature.But this too has exceptions i.e when a thin layer of water is poured on a floor of larger area ,it would be easy for the water to evaporate that kept in a bowl or a kettle
