Water absorbs heat from the surrounding to convert to vapour. This hidde heat is termed as latent heat. (latent meaning hidden) Whenever we have to turn water to vapour, water after reachinga certain stage stops gaining temperature till all the water has been vapourised. Hence, water absorbing heat from the surroundings, cools the surroundings down
