Water transfers heat by process of convection. In order to heat water, we keep the vessel containing water over a gas burner. Though the burner is kept at the bottom of the vessel, but it still heats all the water in the vessel.

Heat is transferred from gas burner to water through the metalic vessel.

Metals are good conductors of heat and help in conducting heat and pass it through them. As water touches the surface of the vessel,the warm vessel comes in contact with cold water and make the water warm as well. When this process continues for a long period of time, the water accumulates so much heat that it starts to boil.
