Plaster of Paris is prepared by heating gypsum at 373K, it loses water molecules and becomes calcium sulphate hemihydrate (CaSO4.1/2H2O).
CaSO4.2H2O ------[on heating]------> CaSO4.1/2 H2O + 1.1/2 H2O
It is kept in air tight container as because as soon as it comes in contact with moisture it turns back in Gypsum.
