Ans= heating of the sugar is different from heating of ammonium chloride because heating of sugar does not make any change whereas   heating of ammonium chloride sublimes it

When we heat sugar a black carbon residue is formed. It is also a chemical, irreversible and permanent change. 
When we heat ammonium chloride it sublimes without melting. It is also a physical, temporary and reversible change.
