There are only 16 languages from the Eight Schedule that are present on the Indian currency. If you include English, then it becomes 17, but then English is not a part of the Eighth Schedule.
The Eighth Schedule has been amended several times:
1. 1967- added Sindhi
2. 1992-added Konkani, Manipuri, Nepali
3. 2004-added Bodo, Dogri, Maithili, Santhali
Of these languages Sindhi, Manipuri, Bodo, Dogri, Maithili and Santhali are not present on the Indian Rupee. So this makes 16 languages from the Eighth Schedule plus English, the 17 languages present on the Indian currency.
Interestingly, Konani and Nepali are a part of the Indian Rupee even though they got added into the Eight Schedule much after Sindhi.
As far as the number of native speakers of these languages are concerned-
Bodo- is spoken by 0.13% people of India
Manipuri- 0.14%
Dogri- 0.22%
Sindhi- 0.25%
Santhali- 0.63%
Maithili- 1.18%
However, there are still some languages on the Indian rupee, which do not have as many native speakers as some of the above listed languages. For eg,
Konkani- 0.24%
Nepali- 0.28%
Kashmiri- 0.54%

So clearly, Maithili and Santhili have more native speakers than Konkani, Kashmiri and Nepali. Also Sindhi has more speakers than Konkani.
Therefore, I have found absolutely no reason why RBI has not included the remaining six languages from the Eighth Schedule on the Indian Rupee. Although there are some mild voices from the native speakers of these languages to include their language on the currency (source provided). My guess is that RBI does not consider it an important issue, and maybe we will have to wait for a huge agitation from the native speakers of these languages to see them printed on the Indian Rupee.
