Basically it's the same way as our immune cells diffferentiate our cells and the foreign particles with the help of glycoprotiens (protiens with carbohydrate as a prosthetic group) our cells have different glycoprotiens than that of a foreign bacteria Or any other micropathogen so if we take fertilization into consideration two protiens called fertilizin and anti-fertilizin are responsible for this they behave as a key and lock and these are species specific so a sperm contains fertilizin that is unique to a species so as both the protiens interact with each other and if eventually find that the key is not for this lock then the sperm would be unable to fuse into the ovum..
