Lets first see some standard methods of note taking which helped me a lot throughout Middle School and High School.
Outline method
I guess you're familiar with this one. Its the one with bullet points, subtopics, charts and tables. Let me show you an example for my English supplement reader.
FRANKENSTEIN
Analysis
⊕ Symbols:
→"Modern Prometheus"
Ф Borrows glimpses from the Greek story
Ф Victor as Prometheus
Ф Going against Nature's will
→Bible
Ф Monster ║Adam
Ф Victor ║God
→Arctic Exploration
Ф Thirst for knowledge
⊕Setting
→ Stuck in icy sea
Ф Reference to Dante's hell in Inferno
Ф Reference to Rime of Ancient Mariner

Okay so now, let's look at a method I learnt in High School.
The Cornell Method.
You divide the paper into three columns:
-The Cue column
-The Notes column
-The Summary column
In the cue column,
write the questions that arise in your mind as the lecture progresses. Highlit the questions which your teacher says are important.
It will look somewhat like this if I took it in the lecture of Frankenstein analysis:
Q- Symbolism of Spark and electricity?
Q- How does the setting give glimpses of the novel?
Q - Why is the subtitle "Modern Prometheus" important?
In the notes column, use the Guideline method.
The Summary column would be empty until the last five minutes of the lecture. In the last five minutes, the lectures discuss the previously taught ideas.
This how the summary column would look like for my Frankenstein lecture:

⊕ Tone and Language important for the story
⊕ High use of Metaphors
⊕ About the Author: Mary Shelley
