As tomato ripens its colour changes from Green to yellow and then eventually to Red .
This is due to the breakdown of chlorophyll , which in turn synthesis a red carotenoid called as lycopene . Lycopene absorbs most of the visible light spectrum , and being red in colour .
Lycopene reflects mainly red back to the viewer . thus a rope tomato appears to be red .
