how we can say that hydrogen gas is produced during burning
of matchstick

The pop sound comes from the small explosion formed by the burning of Hydrogen with oxygen. Other common gasses, such as water vapour, nitrogen, and carbon dioxide will not burn with oxygen, so will not give a pop. Hydrogen burn with “pop” sound because it reacts with compounds or elements around it to release energy.
