Are you taking about metallic mercury? If so, simply pour off the water. The two liquids are immiscible and Hg(l) is much, much more dense than water.

What is Aaron talking about? Boiling off the mercury? That's nonsense. Hg boils at a much higher temperature than water, and water is much more volatile than liquid mercury, so water will simply evaporate much faster than will liquid mercury.

Oh good, Aaron. You had me worried there for a bit. Since you were mentioning the low vapor pressure of Hg, someone might think you were suggesting boiling off the Hg.
