Absence of animals wouldn't have a big effect on either oxygen or carbon dioxide. If the carcasses weren't buried away from oxygen, their carbon would be oxidized into carbon dioxide. But there's three pounds of oxygen above every square inch of land and sea.

If there are no animals on earth there will be no photosynthesis process in plants as the need carbon dioxide to carry out photosynthesis. And I'd there is no photosynthesis so plants can't make there own food and would not survive so the amount of oxygen and carbon dioxide is disturbed.
