Humans do not have that particular digestive enzyme which the cows, buffaloes and other grass eating animals have. The humans lack the potential of breaking the complex components of the grass as it is dense and quite condensed to a high range. It has a complex composition. Another thing which humans lack are the most important type of enzyme chain called cellulase which are groups of enzymes used for catalysing the reaction of converting the cellulose to more or less soluble components making it easier for the digestive system in cows to crack that hard layer of grass which constitute cellulose.
