Because Hydrogenation converts liquid vegetable oils into solid or semi-solid fats, such as those present in margarine. Changing the degree of saturation of the fat changes some important physical properties, such as the melting range, which is why liquid oils become semi-solid.

The hydrogenation of oils are necessary

Explanation:

Hydrogenation of oils

It means converting unsaturated fat in to saturated fat by the addition of Hydrogen in presence of Nickel .

For example :

CH₂CH₂  + H₂------>CH₃CH₃

       (In presence of nickel)

This hydrogenation of oil is important because it converts the liquid vegetable oil into hard mass type and this help in stabilizing the oils and prevents it from getting rancid .
