Decay of organic matter is a process in which organisms of heterotrophic origin, comprising of bacteria, fungi, saprophytic plants, and some animals, process the remains of the original tissue as a source of nutrition for their living.

Contents of dead tissue like polysaccharides, lipids, nucleic acids, and proteins are broken down or fragmented into smaller organic molecules, and by enzymes as well.

Enzymes are secreted into the external environment.
