(this is if it's the type that uses baking soda and vinegar) a chemical reaction between vinegar and baking soda creates a gas called carbon dioxide (to be more exact, hydrogen ions in the vinegar react with the sodium and bicarbonate ions in the baking soda, so the result of this initial reaction is two new chemicals: carbonic acid and sodium acetate), so when they are combined, the gas gets very excited and tries to spread out but since there is not enough room in the volcano for the gas to spread out so it leaves through the opening very quickly, causing an eruption.
