Why we abbreviate Number as "No." ..?
Why not "Nu" or Only "N"...?

That's because the abbreviation is actually for the Latin word "numero," not the English word "number." ... So, in short, "No." isn't "Nu." because it's not short for "number," it's short for "numero."
