When Vegetables or fruits are cut into pieces , we observe the change in colour of the fruit .

This is due to the enzyme called as Polyphenol Oxidase which reacts with the oxygen and undergoes oxidation which finally leads to the formation of brown colour at the chopped surface .

Other examples are , when

Apple is chopped , we find brown colour

When Carrot is chopped , we find White Blush colour .
