if animals change their cells shape by specialized muscle proteins in order to movement happen then does plants change their shape ?

Plants change their shape by the movement of water rolling cells.
When we touch the leaf of Mimosa, The water moves away from it and thus shrinks.

They can shape by regulating the amount of water .
Touch me not plant loses water and shrinks when you touch it
