if you chew a piece of bread it tastes sweet after some time. why?

the digestion starts in the mouth itslef. when the saliva mixes with the bread it break down the complex carbohydrate into simple carbohydrate that is glucose... the starch which is present on the bread is broken down to glucose with the help of amylase which is present in the saliva. so when glucose is formed you get a sweet taste in the mouth
