the chapatti tastes sweet since the enzyme produced from salivary gland that is salivary amylase starts its conversion of carbohydrates into simple sugar .this results in sweet tastee

If you chew chapati for long, after some time it taste sweet because the chapati contains carbohydrate molecules in them.  

The moment they enter the mouth they mix with the saliva and form a bolus. The saliva contains salivary amylase which breaks down the carbohydrates present in the chapati and result in the formation of glucose.  

This glucose gives a sweet taste when chewed by any organism, this later travels through the esophagus further into the digestive system.
