In a bakery, the use baking powder is essential. Why?


Undappan: baking powder has the property of rising molecules, in baking it helps the baked good to rise up , making it soft and fluffy !

If they didn't use baking powder in the cakes and cupcakes and other things of that nature, they would not rise and would be really condensed and not light and fluffy like cake usually is.

When Baking Powder is mixed with Small amount of weak acid such as Tartaric acid, it reacts to form soft compound out of the dough mixed as well as release CO₂ gas to make the cake softer and easy to eat.

The reaction is as follows:

NaHCO₃ + [ H⁺ ] ions from any acid → Sodium salt of the acid + CO₂

This is the reason why bakeries have a crucial importance in the production of Baking Powder.
