In hot weather milk fastly turns sour because -

• The main reason behind the souring of milk is the growth of lactobacillus bacteria in the milk which turns milk into acidic curd. Due to the presence of lactic acid in the curd the milk becomes sour.
• This lactobacillus bacteria grows rapidly in the higher temperatures and lower temperatures are intolerable for this bacteria.
• That's why, lactobacillus bacteria get favourable conditions for rapid growth in the summer season and the milk quickly becomes sour in the summer season.
