Pasteurization is a process of heat treatment in which milk is heated to certain temperature and the time depends upon the temperature applied
There are two types of pasteurization
High temperature short time(HTST) in which milk is heated to temperature of 72 degree centigrade for 15 seconds
and low temperature long time in which milk is heated to temperature of 63 degree centigrade for 30 minutes
This process kills all the vegetative form of bacteria in the milk

In pasteurization process milk is heated up to 71.7°C or 72°C for at least 15 seconds. As more heat and less time it is known as High Temperature Short Time (HTST) Process.
In the second process milk is heated up to 63°C for at least 30 seconds. As less heat and more time as compared to the above process, it is referred as Low Temperature Long Time (LTLT) process.
