According to me , The inter-flowering period will still be called mature.
Juvenile would mean that the plant is reproductively immature, and the androecium/gynoecium is not developed. During the inter-flowering period, It doesn’t revert to its immature state, but has already gone through a sexual cycle, and is just restocking for the next one.
